Ingredients

  • 2 tsp canola oil
  • 1/2 c. uncooked scallion
  • 1 c. chopped frozen spinach
  • 1/4 tsp salt
  • 1/8 tsp nutmeg
  • 1/4 tsp pepper
  • 1 c. fat free skim milk
  • 1 c. low-fat shredded cheddar cheese
  • 2 large eggs
  • 2 egg whites

Preparation

Step 1

Preheat oven to 350 - lightly grease 9"pan - Heat oil in large skillet over med-hi heat
Add onions & cook - stirring occasionally until onions are soft
Stir in spinach & continue cooking until excess moisture has evaporated
In a large bowl, combine eggs, milk, cheese, salt, nutmeg & pepper
Add spinach mixture and stir to blend.
Pour into prepared pan
Bake until eggs have set - 30 min.
Let cool 10 min before serving
