Peach Salsa

Ingredients

  • 6 ripe peaches, peeled and chopped
  • 4 Roma tomatoes, chopped
  • 2 serrano chiles, finely chopped
  • 3 green onions, chopped
  • 1 avocado, chopped
  • 4 tbsp extra-virgin olive oil
  • 2 tbsp sherry vinegar
  • 2 tbsp chopped fresh cilantro
  • Juice of 1 lemon
  • Juice of 1 lime
  • Salt
  • Tortilla chips, for serving

Preparation

Step 1

In a bowl combine peaches, tomatoes, chiles, onions and avocado. Stir to blend.

In a small bowl, whisk together olive oil, vinegar, cilantro, and lemon and lime juice. Pour over the peach mixture and stir to blend. Add salt to taste.

Serve with tortilla chips.
