Black Bean & Rice Soup

Ingredients

  • 2 cans black beans
  • 2 cans diced tomatoes
  • 3 c chicken stock
  • 1/4 c each onion, celery, carrot, summer squash
  • 1 tsp garlic
  • 1 T each cumin, orgeno
  • 1/4 c brown rice
  • 1/4 fresh lime juice (2 limes)
  • 1/2 c cilantro

Preparation

Step 1

Combine all but juice and herbs. Slow cook or simmer. Add juice cilantro at end.
