Ingredients
- 2 cans black beans
- 2 cans diced tomatoes
- 3 c chicken stock
- 1/4 c each onion, celery, carrot, summer squash
- 1 tsp garlic
- 1 T each cumin, orgeno
- 1/4 c brown rice
- 1/4 fresh lime juice (2 limes)
- 1/2 c cilantro
Preparation
Step 1
Combine all but juice and herbs. Slow cook or simmer. Add juice cilantro at end.
