Zucchini "Crab" Cakes

The seasoning in these cakes gives it a real seafood flavor. They are a great appetizer or light meal.

Ingredients

  • 2 cups grated zucchini
  • 2 eggs, beaten (1/2 cup egg substitute can be used)
  • 1 cup seasoned bread crumbs
  • 2 tbsp mayonnaise or salad dressing (fat free can be substituted)
  • 2 tsp Old Bay seasoning
  • 3 tbsp olive oil

Preparation

Step 1

Mix everything together. Blend well. Shape into patties. Fry in medium oil about 4 inches each side. Serve with cocktail sauce or tartar sauce if desired.
