Ingredients
- 2 pork tenderloins (10oz./300g each)
- 1 Tbsp. butter or vegetable oil
- 3 apples, peeled, cored, and sliced
- 1 can (10oz./284mL) Campbell's Onion Soup (Substitution: Dice 1 large onion and saute in 1 tsp. butter; slowly add 2 cups broth, water, &/or white wine and simmer until liquid is reduced to 1&1/4 cups)
- 1/2 cup water (if using above substitution, this may be adjusted based on final volume of liquid)
- 1/3 cup apple juice
Preparation
Step 1
Heat oven to 375 deg.F (190 deg.C). Trim excess fat from tenderloins. In large flameproof casserole over medium-high heat, heat butter; brown tenderloins 2 minutes each side. Add apples, soup, and water; bring to boil. Cover; cook in oven 25 minutes or until meat thermometer inserted in thickest part of meat registers 155 deg.F (68 deg.C) and juices run clear. Remove tenderloins to clean cutting board; keep warm.
In food processor or blender, process apples and cooking liquid until smooth. Return to casserole; stir in apple juice. Bring to boil over high heat, scraping bits from bottom of casserole. Slice tenderloins; serve with app;e-onion sauce and vegetables as desired. Serves 4
