PASTA WITH SMOKED SALMON

Ingredients

  • 1 tbsp butter and 1 tbsp of olive oil
  • 2 cloves of garlic, whole
  • 250 g smoked salmon, chopped
  • 20 cherry tomatoes
  • 45 g of pine nuts
  • 45 g of raisins
  • 125 g of cooking cream
  • Pinch of nutmeg
  • Salt and pepper to taste
  • A few sprigs of wild fennel (if you can't find this then use fresh dill)

Preparation

Step 1

This sauce takes less than 10 minutes to cook, so remember it when cooking your pasta (I usually start to cook the sauce once I've added the pasta to the boiling water). Melt together the butter and oil in a shallow pan which should be on a medium heat. Add the whole garlic cloves and sauté them in the oil for two minutes, taking care not to burn. Remove the garlic from the oil and discard. Add the pine nuts and the raisins and cook for a further minute. Add the salmon and the tomatoes and cook for two minutes - the salmon should start to change color. Add the cream and nutmeg and simmer gently for about 2 minutes. Season with salt and pepper. Drain your pasta and stir it into the pan containing the sauce, cook for a further minute. Garnish with the wild fennel (or dill).
