Lasagna Style Baked Ziti

Ingredients
- 12 oz (about 4 cups) ziti
- 1 T evoo
- 1 lg onion, chopped
- 2 cloves garlic, finely chopped
- 1/2 lb lean beef/turkey
- ks and p
- 1 26 oz jar marinara
- 1 bunch spinach (4 c.) with large stems removed
- 1/2 c. ricotta
- 1/2 c. (2 oz) Parmesan
- 1 c. grated mozzarella

Preparation
Step 1
1. Oven to 400. Cook pasta according to directions, drain and return to pot
2. Meanwhile heat the oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 4-5 minutes, stirring often
3. Add beef, s and p and break it up with spoon, cooking until it is no longer pink. 5-6 minutes
4. Toss the pasta with the meat, sauce, spinach, ricotta, and 1/4 c. of Parmesan
5. Transfer to 9 x 13 inch dish or 4 large ramekins. Sprinkle with mozzarella and last 1/4 c. Parm. Bake until cheese melts, 12-15 minutes.
