    oz (about 4 cups) ziti

    lg onion, chopped

  • 2

    cloves garlic, finely chopped

  • ½

    lb lean beef/turkey

    26 oz jar marinara

  • 1

    bunch spinach (4 c.) with large stems removed

  • ½

    c. ricotta

  • ½

    c. (2 oz) Parmesan

  • 1

    c. grated mozzarella

Directions

1. Oven to 400. Cook pasta according to directions, drain and return to pot 2. Meanwhile heat the oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 4-5 minutes, stirring often 3. Add beef, s and p and break it up with spoon, cooking until it is no longer pink. 5-6 minutes 4. Toss the pasta with the meat, sauce, spinach, ricotta, and 1/4 c. of Parmesan 5. Transfer to 9 x 13 inch dish or 4 large ramekins. Sprinkle with mozzarella and last 1/4 c. Parm. Bake until cheese melts, 12-15 minutes.
