Chocolate Peanut-Butter No Bake Cookies

Ingredients

  • 2 cups sugar
  • 3 1/2 tablespoons cocoa
  • 1 stick butter
  • 1/2 cup milk
  • 1/3 cup peanut butter
  • 1 tablespoon vanilla
  • 3 cups oatmeal
  • Waxed paper

Preparation

Step 1

In a heavy saucepan bring to a boil, the sugar, cocoa, butter and milk. You must boil the sugar mixture for 3 full minutes, stirring constantly - you're sorta making candy then add peanut butter, vanilla and These are sensitive to humidity in the environment, so you can't just dump in 3 cups of oats. Stir in 2, then add the 3rd slowly, stopping when mixture is slightly runnier than perfect. The oats are cooking as you work, & if it's too oat-y, mixture will seize up long before you've dropped half of the cookies.

First few cookies will be slightly runny, so make smaller than avg. Then suddenly the mixture reaches perfect viscosity, & at that point, work fast! Still, the last couple will be a bit dry. On a sheet of waxed paper, drop mixture by the teaspoonfuls, until cooled and hardened.
