Tomatoes, slow-roasted

  • 1 tablespoon sugar
  • 1 tablespoon EVOO
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground pepper
  • 4 pounds plum or other
  • tomatoes, halved lengthwise
  • cooking spray


Preparation time 5mins


Step 1

1. Preheat oven to 200 degrees

2. Combine all ingredients in a large bowl and toss gently to coat tomatoes. Arrange the tomatoes, cut side up on a baking sheet coated with cooking spray. Roast at 200 degrees for 7-1/2 hours.

Note: I covered my pan with foil for easy clean up. I froze the finished product for winter use.
