Ingredients

  • DRESSING:
  • 1/2 C buttermilk
  • 1/2 C mayonnaise
  • 1/2 C sour cream
  • 1 t garlic, minced
  • 2 T fresh parsley, chopped
  • 2 T fresh dill, chopped
  • 2 T fresh chives, chopped
  • 1/4 t onion powder
  • 1/4 t salt
  • 1/8 t ground black pepper
  • 2 T apple cider vinegar
  • 1 t sugar
  • SALAD:
  • 3 broccoli heads & stems
  • 1 C carrots, grated
  • 1/2 C red onion, chopped
  • 1/4 C dried cranberries
  • 1/4 C toasted pine nuts
  • 1/4 C dry roasted sunflower seeds
  • 3/4 C sharp cheddar cheese, grated
  • 4 thick cut bacon or 8 regular sliced chopped into small pieces

Preparation

Step 1

1. Combine all ingredients for dressing in bowl.
2. For salad, remove broccoli heads from stems & cut into tiny florets. Add florets to dressing bowl.
3. Peel outer outer skin from stems & roughly chop stems. Add to bowl with florets.
4. Add rest of ingredients to bowl & toss until completely coated with dressing.
5. Place salad in airtight container. Place in refrigerator for 12 - 24 hours. Toss once or twice.
6. Serve chilled.
