Caramel Corn

A form of Cracker Jack homemade. Caramel corn easy and really irresistible. I have made this several times. Doesn’t last long.

Ingredients
- 6 cups popped popcorn
- 1 cup brown sugar
- 1 stick butter
- 1/4 ¼ cup corn syrup
- 1/2 ½ tsp baking soda
- 2 tsp vanilla
- 1 pinch
- 1/2-1 cup Spanish roasted peanuts
Preparation
Step 1
Preheat oven to 250 degrees.
Put popcorn in 15“x10” pan.
In a 3 quart saucepan, bring to boil the sugar, butter, and corn syrup. Boil for 2 minutes, stirring constantly. Remove from heat and add baking soda, vanilla, and salt. Stir well. MIXTURE WILL FOAM.
Carefully pour over popcorn and nuts, and stir. Spread popcorn out in pan. Bake for 15 minutes. Stir again and bake for 20 more minutes. Stir and remove to a sheet of foil. Let cool.
