Canned Tomatoes

Ingredients

  • 5 1/2 lbs ripe tomatoes, stem ends and cores removed, peeled
  • 1 T bottled lemon juice (not fresh), per pint
  • 1/2 tsp coarse (pickling) salt, per pint
  • 1/2 tsp granulated sugar, per pint

Preparation

Step 1

Tomatoes may be left whole or cut up. Place in large saucepan. Heat on medium until starting to boil. Pour into hot sterilized pint jars to within 1/2 inch of top.

Add lemon juice, salt and sugar to each pint. Place sterilized metal lids on jars and screw metal bands on securely. Process in boiling water bath 35 minutes for pints, 45 minutes for quarts.
