Ingredients
- 1/2 c thinly sliced red onion
- 1 large romaine lettuce heart, chopped (4 cups)
- 1 c grape tomatoes, cut in half
- 1 med green pepper, cored, seeded, and cut into 3/4" pieces
- 1/2 hot house cucumber, cut in half lengthwise and sliced
- 1/2 c pitted Kalamata olives, halved
- 1 t minced oregano
- Basic vinegrette dressing

Preparation
Step 1
Soak the red onion in a small bowl of ice water for about 10 min. Drain and pat dry.
Place the onion in a large salad bowl and combine with the chopped lettuce, and rest of the ingredients.
If you want to make your own dressing:
2 T fresh lemon juice
1 med garlic clove minced
1/2 t kosher salt
1/2 t freshly ground pepper
6 T extra virgin olive oil.
Put first 4 ingredients in bowl. Slowly whisk in olive oil til combined. Put in a jar and shake until well combined
