Ingredients

  • ½

    c thinly sliced red onion

  • 1

    large romaine lettuce heart, chopped (4 cups)

  • 1

    c grape tomatoes, cut in half

  • 1

    med green pepper, cored, seeded, and cut into ¾" pieces

  • ½

    hot house cucumber, cut in half lengthwise and sliced

  • ½

    c pitted Kalamata olives, halved

  • 1

    t minced oregano

  • Basic vinegrette dressing

Directions

Soak the red onion in a small bowl of ice water for about 10 min. Drain and pat dry. Place the onion in a large salad bowl and combine with the chopped lettuce, and rest of the ingredients. If you want to make your own dressing: 2 T fresh lemon juice 1 med garlic clove minced 1/2 t kosher salt 1/2 t freshly ground pepper 6 T extra virgin olive oil. Put first 4 ingredients in bowl. Slowly whisk in olive oil til combined. Put in a jar and shake until well combined
