Ingredients

  • 2/3 c rinsed and drained canned black beans
  • 2/3 c unsweetened/no-sugar-added applesauce
  • 1/3 c canola oil
  • 4 egg whites
  • 1 c sugar
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 c cocoa powder
  • 3 tbsp whole wheat flour
  • 3 tbsp all-purpose flour

Step 1

Preheat oven to 350. Lightly coat an 8x8 baking dish with cooking spray. In a food processor or blender, puree black beans with applesauce, oil and egg whites until smooth. Pour the mixture into large bowl. Add the sugar, salt, vanilla and cocoa powder and mix thoroughly. Add whole wheat and all purpose flour and stir just enough to combine. Pour batter into prepared dish and bake until set and a toothpick inserted comes out clean, about 30 min.
