Ingredients

  • 1 teaspoon olive oil
  • 0.5 cup diced onions
  • 2 teaspoons minced garlic
  • 1 teaspoon cumin
  • 0.5 teaspoon chili powder
  • 0.5 pounds ground beef
  • 15 ounces black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen according to season)
  • 10 ounces diced tomatoes and chiles
  • 0.25 cups fresh chopped cilantro
  • salt and pepper to taste

Preparation

Step 1

In a large pan heat olive oil over medium heat. Add onions, garlic, cumin, and chili powder and sautee 3-4 minutes until they begin to soften. Add ground beef and cook until no longer pink. Stir in black beans, corn, and diced tomatoes and heat through. Stir in cilantro and season with salt and pepper to taste. Use to topped a baked potato, sweet potato, or your favorite salad. Add toppings such as cheese, sour cream, and guacamole as desired.
Freezing Directions:

Cook mixture as directed above and portion into freezer bags. Label and lay flat to freeze. TO SERVE: Thaw and reheat taco topping. Serve as directed above.
