Healthier Pumpkin Chocolate Chip Cookies

Ingredients
- 1 stick unsalted butter or 1/2 cup applesauce
- 1 cup sugar
- 1 cup canned pumpkin
- 1 egg
- 1 tsp vanilla
- 2 cups whole wheat flour
- 1/2 cup flaxseed meal
- 1 tsp baking soda
- 3/4 tsp baking powder
- 1 tsp pumpkin spice
- 3/4 cup chocolate chips
- 1/4 tsp salt

Preparation
Step 1
Set oven to 300.
Whisk flour, bs, bp, pumpkin spice and salt together in a medium bowl
Mix the sugar and butter in a mixer until fluffy
Add pumpkin, egg and vanilla to sugar mixture
Slowly add the dry ingredients at a low speed until combined
Stir in the chocolate chips
Drop cookies onto baking sheets about two inches apart
Bake 22-24 minutes or until edges begin to turn golden brown. Let sit for a few minutes and then transfer to a wire rack to finish cooling
