White Bean Salad in cucumber cups

Ingredients
- 1 15 1/2 oz can great northern beans, drained
- 1/4 cup chopped pimiento-stuffed olives
- 1 tbsp chopped fresh parsley
- 1 tbsp minced fresh chives
- 1 tbsp olive oil
- 2 tsps white wine vinegar
- 1/4 tsp salt
- 1/4 tsp pepper
- 3 large seedless cucumbers

Preparation
Step 1
In a med bowl, combine beans, olives, parsley, chives, oil, vinegar, salt and pepper. set aside. Slice cucumbers into 1 1/2 inch thick slices. Using a melon baller, scoup out centers of cucumbers, leaving a 1/4 inch thick shell. Discard cucumber pulp. Spoon bean salad into cucumber cups.
