Ingredients

  • 1

    15½ oz can great northern beans, drained

  • ¼

    cup chopped pimiento-stuffed olives

  • 1

    tbsp chopped fresh parsley

  • 1

    tbsp minced fresh chives

  • 1

    tbsp olive oil

  • 2

    tsps white wine vinegar

  • ¼

    tsp salt

  • ¼

    tsp pepper

  • 3

    large seedless cucumbers

Directions

In a med bowl, combine beans, olives, parsley, chives, oil, vinegar, salt and pepper. set aside. Slice cucumbers into 1 1/2 inch thick slices. Using a melon baller, scoup out centers of cucumbers, leaving a 1/4 inch thick shell. Discard cucumber pulp. Spoon bean salad into cucumber cups.
