Ingredients
- 2 Tbsp. minced fresh basil, or 1 tsp. dried basil
- 1 Tbsp. extra virgin olive oil
- 2 Tbsp. Balsamic Vinegar
- 2 Garlic cloves-crushed, or ½ teas. Garlic powder
- 2 Medium Zucchini, chunked
- 1 Medium Red Pepper, cut in 1 inch slices
- 2 Yellow crooked neck squash, chunked
- 1 Large Red Onion, cut in wedges
- 1 8 oz. package mushrooms, halved
Preparation
Step 1
Preheat oven to 425 degrees
Combine first 4 ingredients in large bowl. Stir well
Add Vegetables. Toss to coat
Arrange vegetables in a single layer in a shallow roasting pan or on a cookie sheet.
Bake at 425 degrees for 40-45 minutes, or until slightly browned
