Ingredients

  • 4 oz. ground beef
  • 1 (8oz.) can tomato sauce
  • 1 t. Italian Seasoning
  • 2 t. Splenda
  • 1 c. cooked bow tie pasta or mini lasagna noodles, rinsed and drained
  • 1/2 c. cottage cheese
  • 1/4 c. mozzarella cheese
  • 2 T. grated Parmesan cheese

Preparation

Step 1

Preheat oven to 350 degrees. Spray 2 (12 oz.) ovenproof custard cups with olive oil-flavored cooking spray. In a medium skillet sprayed with olive oil-flavored cooking spray, brown meat. Stir in tomato sauce, Italian seasoning, and Splenda. Add noodles. Mix well to combine. Continue cooking for 3 to 4 minutes, stirring occasionally. In a small bowl, combine cottage cheese, 2 T. mozzarella cheese, and Parmesan cheese. Evenly spoon 1/2 c. noodle mixture into each prepared custard cup. Spoon 1/4c cottage cheese mixture over top of each. Arrange about another 1/2c. noodle mixture over cottage cheese. Top each with 1 T. mozzarella cheese. Bake for 20 to 25 minutes. Place baking dish on a wire rack and let set for 5 minutes.

HINT: Usually a scant 1 c. uncooked noodles cooks to about 1 1c.
