Preparation
Step 1
Work with 2 eggs at a time, wash utensils and repeat.
2 eggs will do for 7 jalapenos
Wash oil off jalapenos, slice and see, fill with Monterey Jack cheese.
Separate 2 eggs.
Beat egg white stiff and fold in slightly beaten egg yolks.
Dip jalapenos in egg mix then in fine cracker crumbs.
Fry on 3 sides in hot bacon fat.
