Ingredients

  • 3 carrots, peeled and cut in 1/4" julienne
  • 1 red bell pepper, julienne strips
  • 2 cups fresh broccoli florets
  • 1 cup halved grape tomatoes
  • 1 sm can sliced black olives, drained
  • 1/2 package (16 oz) package Ziti noodles, cooked
  • Dressing
  • 2/3 c olive oil
  • 2 T lemon juice
  • 2 T Dijon mustard
  • 1 t parsley
  • 1 t basil
  • 1 t oregano
  • 1/2 t salt
  • 1/2 black pepper

Preparation

Step 1

In a large bowl, combine carrots, bell pepper, broccoli, tomatoes, olives, and ziti.

In a small bowl, whisk together the dressing ingredients. Pour over pasta mixture, tossing gently.
Cover and chill 2 hrs.
Garnish with fresh basil, if desired.
