Ingredients

  • 2

    English cucumbers or three large regular cucumbers

  • ¼

    cup unseasoned rice vinegar or white wine vinegar

  • 2

    TBS granulated sugar

  • 2

    tsp. celery seed

  • ¼

    tsp fresh ground black pepper

  • 1

    tsp kosher salt

  • 1

    TBS fresh lemon juice

Directions

1. Slice English cukes or if using regular cukes, peel, seed and slice into a bowl 2. In small glass measure or canning jar, combine the rest of the ingredients and shake or stir until sugar and salt are dissolved. Pour over cukes/onions. Toss to coat and allow to sit in fridge for about 30 minutes before serving.
