Albacore Tuna

Ingredients

• 4 6oz fillets
• 2 oz butter
• 1/4 C onion, diced
• 2 T garlic, finely diced
• 2 C heavy cream
• 1/2 C jalapenos, finely diced & seeded
• 1 t pepper, coarsely ground
• 2 t salt
• 6 slices bacon, diced & sautéed
• 6 jalapenos, grilled
• 2 T butter, melted

Preparation

Step 1

1. Heat butter in sauce pan. Add onions & garlic. Saute until tender.
2. Add cream & reduce by half. Add jalapenos, salt & pepper.
3. Grill jalapenos until lightly charred on both sides.
4. Sprinkle salt & pepper over fillets. Drizzle with butter. Grill until done.
5. Place sauce over fish & garnish with bacon & grilled jalapenos.
