Irish Soda Bread | Heirloom Recipe

This is a very good, sweet Irish soda bread. It is amazing when paired with a creamed ginger butter.

Ingredients

  • 4 cups flour
  • 1/2 cup sugar
  • 1 T baking powder
  • 1 t salt
  • 1 t baking soda
  • 1/8 t cream of tartar
  • 1/2 cup (1 stick) butter, melted
  • 1 cup raisins (optional)
  • 1 t caraway seed (optional)
  • 1 1/2 cups buttermilk
  • 2 eggs

Preparation

Step 1

Preheat oven to 325F. Butter a 9 inch round pan or casserole.* Whisk together try ingredients. Add butter and blend until the mixture crumbles. Add raisin and caraway seeds if desired. In a separate bowl, mix buttermilk and eggs. Combine the buttermilk/egg mixture with the dry ingredient. Mix well. Form into a round loaf and place in prepared pan. Bake for about 75 minutes. Poke with toothpick -- it is done when the toothpick comes out clean. Let sit for 5 minutes then remove from pan and let cool on a wire rack.
* alternately, you can bake in a two bread loaf pans, but reduce the baking time to about 45-50 minutes.
