Ingredients
- 1 tablespoon olive oil
- 3 medium carrots, peeled and chopped
- 1 medium onion, chopped
- 2 garlic cloves, smashed
- 1 28oz can whole tomatoes with their juice
- 1 medium potato, diced
- salt and pepper
- 2 cups lentils, picked over and rinsed
- 1 bay leaf
- 2 basil leaves, torn
- fresh grated parmesan

Preparation
Step 1
Heat oil in 4 quart pot over medium heat. Add carrots, onions and garlic, cook until lightly brown (about 2 minutes). Add tomatoes by squeezing with your hands over pot to crush them. Pour in juices also. Add potato, 4 cups water, salt, pepper, lentils, bay leaf and basil. Bring to boil then reduce heat and simmer around 1 hour. Remove and discard bay leaf. Garnish with parmesan cheese
