Ingredients

    ounces shrimp thawed and chopped into 1/2 inch pieces

  • 2

    tablespoons olive oil

  • 1

    tablespoon taco seasoning

  • 8-10

    flour tortillas heated

  • 1

    cup chopped letteuce

  • 8

    ounces white cheddar cheese, shredded

  • 1

    large tomato diced

  • Lime wedges if desired

  • Sauce:

  • 8

    ounces low-fat sour cream

  • 1 ounce packet ranch dressing mix

  • 1.25 oz packet taco seasoning

  • Milk as need to thin

Directions

Drop chopped shrimp into a zip-lock bag and add the oil and taco seasoning and let marinate approx. 1/2 hour. In the meantime, combine sauce ingredients and season with the taco seasoning to taste. This sauce with milk if necessary. Chop lettuce and tomatoes. Heat a large saute pan to medium high and quickly saute the shrimp tossing to cook evenly. (About 4 minutes total). Spread a tablespoon of sauce on warm tortilla and add shrimp, cheese, lettuce and tomatoes. Serve with lime wedges if desired. Additional salsa, either traditional or mango, or an avocado tomatillo salsa is a great addition on top!
