Oklahoma cake is sweet and fruity topped with a cream cheese frosting and chopped nuts.
- 2 cups all-purpose flour
- 2 teaspoon baking soda
- 2 cups sugar
- 2 eggs
- 1 cup chopped nuts
- 1 (20-ounce) can crushed pineapple, in own juices
- 1 stick butter at room temperature
- 1 (8oz) package of cream cheese at room temperature
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 1/2 with 1/2 cup chopped nuts
Preparation time 20mins
Cooking time 75mins
In a large bowl, combine all the ingredients and mix well.
Pour batter into an un-greased 9X13" pan.
Bake at 325F for 45 to 55 minutes.
Remove from pan and set aside on a wire rack to cool completely.
In a small bowl, combine all ingredients and mix well.
Spread over top of cake. Sprinkle 1/2 cup of chopped nuts on top of icing.
