Simple Zucchini Cakes

Ingredients

  • 1 pound shredded zucchini
  • 1 egg
  • 1/4 cup flour
  • 1/4 cup grated Gruyere cheese
  • 1/4 teaspoon each salt and pepper.
  • 1/4 cup vegetable oil

Preparation

Step 1

Mix together 1 pound shredded zucchini, 1 egg, 1/4 cup flour, 1/4 cup grated Gruyere cheese, 1/4 teaspoon each salt and pepper. Heat 1/4 cup vegetable oil in nonstick skillet over medium-high heat. Form mixture into pancakes and saute 2 minutes per side. Serve with sour cream.
