Ingredients
- 1 can (15 oz) garbanzo beans, drained and rinsed
- 1/3 c diced red bell pepper
- 1/3 c diced onion
- 1 1/2 tbsp mayo
- 1 1/2 tbsp sour cream
- 1 tbsp cider vinegar
- 1 tsp Dijon mustard
- 1/4 tsp paprika
- 1/8 tsp black pepper
- 1/8 tsp salt
- 2 (6 inch) pitas or mini pitas
- 4 tomato slices
- 4 lettuce leaves

Step 1
Pour garbanzo beans into a medium bowl and mash with a fork or potato masher. Add the red pepper, onion, mayo, sour cream, vinegar, mustard, paprika, black pepper and salt. Stir to combine. If time allows, refrigerate overnight for the best flavor. To assemble each sandwich, slice each pita in half. Fill each with 1/2 cup of chickpea spread, one tomato slice and one lettuce leaf
