Italian Sausage with peppers, onions and penne pasta

  • For 2 servings
  • 1 TBS extra virgin olive oil
  • 2 to 3 fully cooked italian sausage (sweet, hot or a mixture of both)- sliced diagnolly about 1/4" thick
  • 1 onion thinly sliced
  • 1/2 red pepper thinly sliced
  • 1/2 green pepper thinly sliced
  • 1 clove garlic minced
  • 1/4- 1/2 cup marinara sauce
  • 2-4 TBS red wine
  • salt and pepper
  • penne pasta (enough for 2 servings)
  • fresh basil
  • shaved parmesan (optional)



Step 1

Heat oil in skillet then add onions, peppers and garlic. Saute until partially softened. Add sausage, marinara and red wine. Reduce heat and simmer 15 minutes covered

Cook pasta according to instructions. Drain but reserve 1/4 cup of pasta water.

After the 15 minutes remove lid from sausage mixture and add pasta water, starting with 2 TBS and if you want thinner, add remaining. Stir in pasta and fresh basil.

Serve in bowls and if you wish top with parmesan.
