Lazy Day Blueberry Cobbler

This cobbler whips up in just a few minutes and is a showstopper! Perfect to top of a summer evening with friends or a low key night hanging out with your family. Treat yourself to this simple pleasure!

Ingredients
- 1 cup flour
- 1 1/2 cup sugar (divided)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2-2/3 cup milk
- 1/2 cup butter
- 3 cups blueberries
- 1 Tablespoon lemon juice
Preparation
Step 1
Heat oven to 350. Melt butter in oven in 8×11 baking dish. (Yes! Just do it!)
Mix flour, 1 cup sugar, salt, and baking powder. Add milk gradually until a smooth batter forms. Spoon batter into baking dish on top of butter until the butter is covered with batter.
In saucepan mix blueberries, 1/2 cup sugar, and lemon juice over low heat until sugar is dissolved. Top the batter evenly with blueberries. (Throw in a few extra blueberries if you’re feeling crazy!)
Bake at 350 for 35 minutes or until cobbler is light brown across the entire dish. Serve warm with a scoop of ice cream.
