Chicken & Rice Casserole

Ingredients

  • 2 c cooked Riceland rice
  • 2 c (8 oz) shredded Monterrey Jack cheese
  • 1-1/2 c cooked, chopped chicken breast
  • 1 can (12 fl oz) evaporated milk
  • 1/2 c finely chopped red onion
  • 2 large eggs, lightly beaten
  • 1/4 c chopped fresh cilantro
  • 2 Tbsp butter or margarine, melted
  • 1 Tbsp diced jalapeños, (optional)

Preparation

Step 1

Preheat oven to 350°. Grease a 2 qt casserole dish.

Combine all ingredients well in a dish.

Bake 45-50 minutes or until knife inserted in center comes out clean.
