  • Tomatoes of choice
  • Garlic
  • Your Favorite Herbs (optional)
  • Salt and pepper
  • Olive Oil

Step 1

Preheat oven to 250 degrees.

Smaller tomatoes can be left whole, medium tomatoes can be halved, or larger (Beefsteak, etc.) can be sliced.

Place tomatoes in a baking pan. Sprinkle with finely chopped onion and herbs of your choice (herbs are optional) as well as salt and pepper.

Just cover tomatoes with olive oil and bake for 1 to 1 1/2 hours.

These are good spooned over chicken, fish, etc. Or eat straight from the baking pan.
