Chicken Breasts Stuffed with Herbed Goat Cheese

Ingredients

  • 1 Tbsp olive oil
  • 1 small onion, minced
  • 1 clove garlic, minced
  • 8 oz goat cheese
  • 1/2 c coarse bread crumbs
  • 1 tsp fresh parsley, chopped
  • 1/2 tsp each: dried summer savory, dried sage, salt
  • Freshly ground pepper
  • 4 boneless, skinless chicken breast halves, flattened to 1/4-inch thickness, see note

Preparation

Step 1

Heat oven to 350°. Heat olive oil in a large, heavy oven-proof skillet over medium-high heat. Add onion and garlic; cook, stirring, until onion softens and garlic becomes aromatic, about 2 minutes. Remove skillet from heat; transfer onion and garlic to a medium bowl.

Add the goat cheese, bread crumbs, parsley, summer savory and sage to the onion-garlic mixture; blend with a fork, tossing gently, until mixture, tossing gently, until mixture is well blended.

Return skillet to medium-high heat. Divide the goat cheese mixture among the chicken breasts. Fold each breast over to cover filling; secure with a toothpick if desired. Season each breast with the salt and pepper to taste. Add breasts to the skillet; cook, turning occasionally, until browned, about 3 minutes each side.

Transfer the skillet to the oven; bake until chicken is cooked through, about 20 minutes.

Note: To flatten chicken breast halves, place them one at a time in a heavy food storage bag. Use a mallet, hammer or rolling pin to pound the chicken breast to desired thickness. Remove the chicken breast from the bag; repeat with remaining pieces.
