Ingredients
- 1 cup chopped zucchini
- 1 large tomato chopped
- 1 medium onion chopped
- 1/3 cup grated Parmesan cheese
- 1/2 cup Bisquick Reduced fat baking mix
- 1 cup fat-free (skim) milk
- 1/2 cup fat-free cholesterol-free egg product
- (or use 2 eggs)
- 1/2 teaspoon salt
- 1/8 teaspoon freshly-ground black pepper
Preparation
Step 1
Heat oven to 400 degrees. Grease 9-inch pie plate.
Layer zucchini, tomato, onion and cheese in pie plate. Stir remaining ingredients until blended. Pour into pie plate.
Bake about 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes.
This recipe yields 6 servings.
