Lemon Squares w/Nilla Wafers

Ingredients

  • Crust:
  • 20 Reduced Fat Nilla Wafers, finely crushed
  • 1/2 ½ C flour
  • 1/4 ¼ C. brown sugar
  • 1/4 ¼ C. cold margarine
  • Combine wafer, flour, brown sugar and cut in cold margarine until it resembles coarse crumbles. Press firmly in bottom of 8 inch square pan lined with foil (extend foil over sides of pan). Bake 15 minutes.
  • Beat:
  • 8 oz cream cheese
  • 1 C. sugar
  • Add in 2 eggs and 2 Tbl. four, beat well.
  • Blend in:
  • 1 Tbl. lemon peel
  • 1/4 ¼ C. fresh lemon juice
  • 1/4 ¼ tsp. baking powder
  • Pour over crust.

Preparation

Step 1

Bake 25 to 28 minutes or until center is set. Cool completely. Cover and refrigerate at least 2 hours or overnight. Sprinkle with powdered sugar and grated lemon peel if desired just before serving. Store leftovers in frig.
