Ingredients
- 1/2 C soy sauce
- 2 T lemon juice
- 1 T cornstarch
- 1 T brown sugar
- 1 clove minced garlic
- 1 t black pepper
- 2 T vegetable oil
- 1 medium onion chopped or sliced
- 2 # steak sliced about 1/4" thick (easier to slice if partially frozen)
- 2 heads of broccoli chopped
- 2 t ginger
- 2 carrots chopped
- 2-3 stalks of celery chopped
- 1 green pepper chopped
- 1 red pepper chopped
- 4-5 spinach leaves torn
- 1 can of baby corn
- 2-3 green onions chopped
- 1 small pkg firm tofu chopped finely (optional)
- 1 C cooked rice
- 3/4 C water

Preparation
Step 1
In small bowl whisk together soy sauce, lemon juice, cornstarch, brown sugar, garlic, peppers and tofu (if used)and allow to marinate for at lest an 1/2 hour. Heat half the vegetable oil in a large skillet and brown beef stir frying until desired doneness. Remove beef from skillet and transfer to a dutch oven or large sauce pan. Add the remaining vegetable oil to the skillet and stir fry onions for 5 minutes. Add water and other vegetables to the skillet and bring to a boil. Cover and simmer 3 minutes. Combine vegetables, soy sauce mixture, and ginger to the beef in the larger dutch oven or sauce pan and bring to a boil. Simmer until gravy thickens then stir in rice and serve.
