Ingredients

  • Cake:

  • 3

    cups all-purpose flour

  • 2

    cups sugar

  • 1

    tsp salt

  • 1

    tsp baking soda

  • 1

    tsp cinnamon

  • 3

    eggs beaten

  • 1 1/2

    cups oil

  • 1 1/2

    tsp vanilla extract

  • 1

    (8oz) can crushed pineapple undrained

  • 2

    cups chopped nuts

  • 2

    cups chopped bananas

  • Icing:

  • 1

    (8OZ) cream cheese

  • 1/2

    cup butter

  • 2

    cups powdered sugar

  • 1

    tsp vanilla extract

Directions

Cake: 1. In a large mixing bowl combine all the dry ingredients, and mix well. Add eggs and oil stirring until the dry ingredients are moistened. DO NOT BEAT! 2. Stir in vanilla extract, crushed pineapple, chopped nuts, and bananas. 3. Grease and flour three 9" pans. Pour batter into each pan. 4. Bake at 350F for 25 to 30 minutes. Icing: 1. In a medium bowl, combine cream cheese, butter, powdered sugar, and vanilla extract. Mix well. 2. Spread icing between layers of cake and on top and sides.
