Paleo Buffalo Chicken Soup
This healthy and delicious paleo buffalo chicken soup is a family favorite during the colder months!
Ingredients
- 1 head cauliflower, chopped
- 4 organic chicken breasts
- 2 tablespoons organic chicken stock
- 2 tablespoons organic raw honey
- 3 stalks celery
- 1 cup Frank's red hot sauce
- 1 onion, diced
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- 1/2 tablespoon onion powder
- 1/2 cup coconut milk
- 1/2 tablespoon fresh parsley
- 1/2 tablespoon chives
- 1/2 tablespoon dried dill
- 1/2 cup cilantro, chopped

Step 1
In a large stockpot, bring 8 cups of water, cauliflower, and chicken breast to a boil. Reduce heat.
Add coconut milk, chicken stock, spices, honey, and franks red hot sauce. Cook down until the chicken is completely tender.
Remove the chicken. Use a stick blender to puree remaining ingredients.
Shred the chicken with a fork and add to the pot.
Chop the celery and onion and add to the pot
Stir in the parsley, chives and cilantro and simmer for 20 minutes.
