Ingredients

  • 2 Med zucchinis, sliced thin about 4/4"
  • 2 1/2 Tbsps butter
  • 2 TBSP flour
  • 1/2 cup heavy cream
  • 1/2 cup milk
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/3 cup sharp cheddar cheese
  • 1/3 cup parmesan cheese, shredded
  • Breadcrumb Topping
  • 1/2 cup panko breadcrumbs
  • 1 1/2 TBSP sharp cheddar cheese, shredded
  • 1 1/2 TBSP parmesan cheese, shredded
  • salt and pepper
  • 1 TBSP butter, melted

Step 1

Melt Butter in saucepan. Add flour and mix thoroughly with a spoon. Cook butter-flour mixture while stirring for 3-4 minutes. Whisk milk and heavy cream in slowly. Continue whisking and cooking on medium heat for about 3-5 minutes until thickened. Add salt and pepper and turn off heat. Add cheese, whisk until the cheese is melts.

Mix panko breadcrumbs with cheese and add a dash of salt and pepper. Add cheese sauce to a large measuring cup.

Prep baking dishes, 5x5 baking dish. Grease . Layer zucchini, overlapping is good. On top of each layer pour about 2 TBSPS of cheese sauce and spread out with spoon. Continue layering (about 3 or 4 layers).

On top of the last layer of cheese, top with panko crumbs mixture and then drizzle with butter.

Bake about 20-25 minutes at 375 degrees. Then broil to brown top if needed.
