Ingredients
- For Corn salsa:
- 2 husked ears of corn
- juice of 1 1/2 limes
- 1/4 cup chopped fresh cilantro
- 2 tablespoons finely chopped red onion
- For Chipotle Ketchup:
- 2 tablespoons ketchup
- Minced canned chipotle chiles in adobo sauce, to taste
- For Assembly:
- 4 hot dogs, grilled
- 4 hot dog buns, toasted
- Corn salsa, to taste
- Chipotle ketchup, to taste
- 1 avocado, mashed
Preparation
Step 1
To Make Corn Salsa:
Grill corn over medium-high heat, turning, until charred in spots. Cut kernels from ears. Combine kernels, lime juice, cilantro, and red onion in a bowl.
To Make Chipotle Ketchup: Season ketchup to taste with chipotle chiles.
To Assemble:
Place hot dog in hot dog bun. Top with corn salsa, mashed avocado and chipotle ketchup, to taste.
