Latin Hot Dog

Ingredients

  • For Corn salsa:
  • 2 husked ears of corn
  • juice of 1 1/2 limes
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons finely chopped red onion
  • For Chipotle Ketchup:
  • 2 tablespoons ketchup
  • Minced canned chipotle chiles in adobo sauce, to taste
  • For Assembly:
  • 4 hot dogs, grilled
  • 4 hot dog buns, toasted
  • Corn salsa, to taste
  • Chipotle ketchup, to taste
  • 1 avocado, mashed

Preparation

Step 1

To Make Corn Salsa:
Grill corn over medium-high heat, turning, until charred in spots. Cut kernels from ears. Combine kernels, lime juice, cilantro, and red onion in a bowl.

To Make Chipotle Ketchup: Season ketchup to taste with chipotle chiles.

To Assemble:
Place hot dog in hot dog bun. Top with corn salsa, mashed avocado and chipotle ketchup, to taste.
