Salsa Chicken *(GOOD)*

Ingredients

  • 8 boneless, skinless chicken thighs
  • 1 package taco seasoning mix
  • 1 c. mild or hot salsa
  • 2 c. shredded Cheddar cheese
  • Garnish: sour cream
  • Optional: cooked Mexican rice, diced tomatoes, shredded lettuce

Preparation

Step 1

Place chicken in lightly greased 13"x9" baking pan. Sprinkle taco seasoning on both sides of chicken; pour salsa over all.

Bake, covered, at 375 degrees for 30 to 35 minutes, or until chicken is tender and juices run clear. Sprinkle evenly with cheese; let stand until cheese is melted.

Dollop with sour cream and serve, over Mexican rice and topped with tomatoes and lettuce, if desired. Serves 4.
