Ingredients
- Topping:
- 1 1/4 cups packed brown sugar
- 1/2 cup oil
- 1 egg
- 2 teaspoons vanilla
- 1 cup sour milk
- 1 1/2 cups diced rhubarb
- 2 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tsp butter
- 2 tablespoons sugar
- 1/2 teaspoon cinnamon

Step 1
In a large bowl combine sugar, oil, egg, vanilla and milk, beat well. Stir in rhubarb. Add flour, baking soda, baking powder and salt, mix just until blended. Fill muffin tins about 2/3 full. Sprinkle with cinnamon sugar. Bake 400°F for 20 – 25 minutes.
