Ingredients
- Fennel Slaw with Orange:
- 4 cups fennel, shaved on a mandolin slicer
- 4 cups napa cabbage, thinly sliced
- 2 cups cherry tomatoes, halved
- 3 cups green beans, blanched and shocked
- 1/2 cup basil leaves, chopped
- 1 cup pumpkin seeds, roasted
- 1/4 cup chives, chopped
- 3 medium oranges, segmented and juice reserved
- 2 Cups Orange Yogurt Dressing (recipe follows)
- Salt and Pepper to taste
- Yogurt Dressing:
- 1/2 cup orange juice
- 1/4 cup apple cider vinegar
- 2 tbsp hemp oil
- 1 1/2 cups yogurt
- Salt and pepper

Preparation
Step 1
Combine all ingredients in a mixing bowl and toss with Yogurt dressing. Season to taste with salt and pepper.
