Ingredients

  • 1/2 white onion, finely chopped
  • 1 jalapeno (seeded for less heat, is option), finely chopped
  • 1/4 c. fresh cilantro, chopped
  • kosher salt and pepper
  • 2 ripe avocados, diced
  • 2 T fresh lime or lemon juice
  • 1/2 c. serving = 135 calories

Preparation

Step 1

1. In a large bowl, combine the onion, jala, cilantro, 3/4 t. salt, and 1/2 t. pepper

2. Using the back of a fork, mash the vegetables until they begin to release their juices

3. Add the avocados and lime juice and stir to combine

OK to make ahead -- one day ahead. Put in bowl with plastic wrap pressed directly on surface.
