Lemon Cheesecake Bars

Ingredients

  • Mix together and press in the bottom of an ungreased 9x13 pan:
  • 1 lemon cake mix
  • 1 egg
  • 1/3 C. butter, softened
  • Beat 8 oz. cream cheese with a mixer until creamy. Gradually add 1 C. powdered sugar. Next add 2 T. grated lemon peel and 2 T. lemon juice (I used both from fresh lemons). Reserve 1/2 C. of mixture and put in the frig.

Preparation

Step 1

To the remaining add 2 eggs, mix until well combined. Pour over crust. Bake at 350 until set, approximately 25 minutes. Cool completely. Spread reserved mixture on top. Return to frig until ready to serve.
