Ingredients
- 2 tsp. oil
- 4 boneless chicken breasts
- 2 C. frozen broccoli florets, thawed
- 1 10oz. can cream of chicken soup
- 4 oz. velveeta, cut into 1/2" cubes
- 2 C. hot cooked rice
Preparation
Step 1
Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 7 minutes or until done, turning after 4 minutes. Remove from skillet; cover to keep warm.
Add broccoli, soup and velveeta; mix well. Simmer on medium heat 7 min or until heated through and cheese is melted; stirring often.
Serve chicken and broccoli mixture over rice.
Option: Try mushroom soup, replacing broccoli with peas
